French Macarons is a cookie that was born on Italy by the famous Pastry Chef Catherine de Medicis in 1533 when she was married to King Henry II in 1547. The word "macaron " has the same meaning of the word "macaroni" that means "fine dough"

240g powdered sugar
90g egg whites
237 almond ground
beat the egg whites and powdered sugar until stiff.
sift the almond ground then fold it in the meringue mixture the set aside

230 refined sugar
100 egg whites
double boil this two mixtures with continuous stirring, until it is clear and has to lumps.
mix it in a mixer with a wire whisk until it is stiff.

fold the almond mixture and the second mixture the using a pastry bag, pipe it in a silpat or macaron maker.
bake it in 90 degrees celsius for 20-30 mins.
